To me making a cocktail is not entirely unlike the art of theatre. It is a meeting between rigid technique and a willingness to experiment and fail. The spirits, liquors, juices, and syrups are not unlike the elements of creating theatre. With the proper combination of the script, the actors, the directors, the producers, you can have a masterpiece, or at the very least, a great evening!

Southern Gentleman
A blueberry and sage julep, and one of the only times I have called something loaded with butter “refreshing.”

The Grape Gatsby
This is a riff on a pisco sour revolving around the flavors of grape soda. It is fruit-forward, tart, and intensely crushable.

Coco Claro
This is a clarified pandan painkiller I made to show off the herb and fruit notes of cachaca. It is tropical in vibe but round in flavor and mouthfeel.

NA-Groni
I don’t typically go for NA cocktails that are attempts at a 1:1 version of a classic. I made this to prove myself wrong. A non-alcoholic negroni that is bitter and complex.

Count Each Moment
This is a riff on Takuma Watanabe’s ‘Tea Ceremony’ at his bar ‘Martiny’s.’ Playing with the toasty and nutty notes of the yoka koji, this rich and umami old fashioned will leave you feeling cozy.

A Fall fruit cocktail featuring a home-made Grenadine. It’s a great fall cocktail for those who stray away from apples and spice.

This was the 2nd place cocktail on the JSS 2024 Shochu Cocktail Competition. Meant to be the perfect pairing for Tonkotsu Ramen, this is a Kyushu-inspired Hot Toddy.

Where's My Stash
This is what you would get if a Mint Julep and a Mai Tai had a baby. This cocktail is tart, nutty, and super refreshing.

I'm Mister Sun
This was one of the cocktails from my first menu, and it eventually became one of the most popular cocktails at the bar. A tropical and spicy take on the Blood and Sand, it’s a great intro for those who are starting to try mezcal.

Ucello Paradiso
